UNESCO: Representative List of the Intangible Cultural Heritage of Humanity - 2009 URL: www.unesco.org Description: The art of Azerbaijani Ashiqs combines poetry, storytelling, dance and vocal and instrumental music into a traditional performance art that stands as a symbol of Azerbaijani culture. Characterized by the accompaniment of the ''saz,'' a stringed musical instrument, the classical repertoire includes 200 songs, 150 literary-musical compositions known as ''dastans,'' nearly 2000 poems in different traditional poetic forms and numerous stories. The regional variations may include other musical instruments, but all are united by a common national language and artistic history. Ashiqs take part in weddings, friendly parties and festive events throughout the Caucasus and appear on concert stages, radio and television, sometimes synthesizing classical melodies with contemporary ones as they continue to recreate their repertoire. Their art is considered an emblem of national identity and the guardian of Azerbaijani language, literature and music. Even as Ashiqs represent the consciousness of a people, they also help to promote cultural exchange and dialogue: Kurds, Lezhins, Talishes, Tats and other ethnic groups living in the country often perform the Ashiqs art, and their poems and songs have spread across the region. Azerbaijani cuisine throughout the centuries has been influenced by the foods of different cultures due to political and economic processes in Azerbaijan. Still, today's Azerbaijani cuisine has distinctive and unique features. Many foods that are indigenous to the country can now be seen in the cuisines of other cultures. For the Azerbaijanis, food is an important part of the country's culture and is deeply rooted in the history, traditions and values of the nation. Out of 11 climate zones known in the world, the Azerbaijani climate has nine.This contributes to the fertility of the land, which in its turn results in the richness of the country's cuisine. It is famous for an abundance of vegetables and greens used seasonally in the dishes. Fresh herbs, including mint, coriander, dill, basil, parsley, tarragon, leek, chive, thyme, marjoram, green onion and watercress, are very popular and often accompany main dishes. The Caspian Sea is home to many edible species of fish, including the sturgeon, Caspian salmon, kutum, sardines, grey mullet, and others. Black caviar from the Caspian Sea is one of Azerbaijan's best known delicacies well sought after in other parts of the world, including former Soviet countries. AZERBAIJAN MUGAMS... Mugams, being the most ancient and the rearest «pearls» of Azerbaijan music culture, are mature creative expression of moral world of people's wit. Azerbaijan music is based on Mugam. Mugams, which are foundations of our music, are art taste of not only Azerbaijan, but also all of Eastern people. In historical source, there is an information about the existence of great music culture in the states; Shumer, Manna, Midia. In the X-IX centuries BC, during the leadership of Midia, around the lake Urmia, the Mugs, being ancient Azerbaijan tribes, living in Mugan, were spreading out their scientific knowledge in palaces, among the people and were involved in music. Nizami Ganjavi, (1141-1209) stating, that the Mugs were musicians, writes in his «Igbalname»: «Singer, play an ancient melody. Play some Mugan melody like the Mugs». According to this, we can say that Mugam melodies first appeared in the territory of Mugan. The music critics of Iran, Arabian countries and also other countries, making investigations of mugam state, that mugam had been widely spread out in Sasani times (III-VII centuries) and mugams were played in the form of «destgah», which means in groups. The traditional art of Azerbaijani carpet weaving in the Republic of Azerbaijan

UNESCO: Representative List of the Intangible Cultural Heritage of Humanity - 2010 URL: www.unesco.org Description: The Azerbaijani carpet is a traditional handmade textile of various sizes, with dense texture and a pile or pile-less surface, whose patterns are characteristic of Azerbaijan's many carpet-making regions. Carpet making is a family tradition transferred orally and through practice. Men shear sheep in spring and autumn, while women collect dyestuffs and spin and dye yarn in the spring, summer and autumn. The weaving is undertaken during winter by the female members of the extended family, girls learning from their mothers and grandmothers and wives assisting their mothers-in-law. The carpet is made on horizontal or vertical looms using multi-coloured wool, cotton or silk yarn coloured with natural dyes. Applying special techniques to create pile carpets, weavers knot the pile yarn around threads of the warp; pile-less carpets are variously made with interlacing structural warps, wefts, and patterning wefts. The cutting of a finished carpet from the loom is an unusually solemn celebration. Carpet weaving is closely connected with the daily life and customs of the communities involved, its role reflected in the meaning of the designs and their applications. Sari Gelin is a folk song of Azerbaijan.Sarı Gelin has many different lyrical interpretations in many languages, but the melody remains unchanged. Whether the name "Sarı Gelin" refers to a blonde bride, a girl/bride of the mountains, or simply a bride in yellow garments is unknown since the history and precise origin of many songs, originally belonging to oral folk traditions such as Sarı Gelin, are difficult to determine. A controversial documentary with the same title as the song was distributed in Azerbaijan schools which shows the official Azeri version of the Armenian Genocide .Sarı is an adjective and is often simply translated as "yellow". However, it can also mean "fair-skinned" and/or "blonde".
